Pumpkin is believed to have originated in the Americas. Pumpkin seeds, dating back to as early as 7,000 BC, have excavated in Mexico. Pumpkin, a staple in the Native American diet, was introduced to early colonial settlers who used it in variety of dishes including soups and desserts. Records suggest that the first pumpkin pie was created by European colonists. A hollowed pumpkin was filled with milk, spices & honey and then baked in the hot ashes of a fire. Pumpkin was unknown in Europe until it was introduced by Spanish Conquistadors following explorations of the Americas. In Eastern Europe and the Mediterranean basin (including Greece and Turkey), pumpkin seeds have found widespread culinary use.
