Gözleme | Grilled Flatbread with Filling

Gözleme is a traditional Turkish flatbread made from sheets yufka dough that are lightly brushed with butter and eggs, filled with various toppings, sealed and cooked over a griddle. Most commonly, Turkish the street food classic is topped with cheese and spinach.



Gözleme is made from a simple
dough of flour, water and salt. The dough is then rolled into fine sheets and filled to personal preference. Finally, the sealed parcel is cooked on a domed griddle (sac). When grilled, small brown spots (or eyes) appear on the grilled dough. In Turkish, word the ‘göz’ means eye.
